Mod Hole Crabs (as I call them) Know as "Jueyes" in spanish





This mod hole crabs taste best made with rice, beans and some maduros (ripe plantains). Thanks to my friends Nereida and Chica in St. Croix, for sending them to me after much supplication :)
These crabs make their hide away inside holes that they dig in the mod. They are fun to catch.

West Indies hot sauce made in St. Croix, V.I.




Growing up in St. Croix, I was exposed to this awesome, super hot, West Indies style, sauce. My favorite memory is getting out of the club in the wee hours of the morning (back in the 80s), and making a routine stop at one of the mobile truck, and getting some crockettes (bitter balls) with some of this hot sauce and ketchup. It was tha' bomm!

Mofongo with shrimp creole and...pork chop, of course!





This is one of Puerto Rico's best dish. If you ever visit the island, be sure to ask for Mofongo. Mofongo is made out of cooked green plantains, seasoned with different spices such as garlic, onion, adobo, and other spices. Just know this, Mofongo is prepared and cooked differently on different parts of the island, but it has the outcome.

Growing up in the simple life, getting the catch of the day and add some fried dough with green plantains and a salad, and you had one of the best "poor people's dinner", as we used to call it.
